To can preserves: You must use the apricot preserves immediately after they are done boiling. Fill warm jars to within 1/2 inch of the top, tighten lids and process in a boiling water bath canner for 15 minutes. Remove jars and let cool for 24 hours.
And yes, some apricots really do look like miniature peaches, fuzzy skin and all, but the taste of apricots is different than that of peaches. When ripe and fresh, apricots are both sweet and tart, while peaches are generally just sweet.
A simply sublime Peach & Apricot jam which lends itself perfectly to breakfast or tea time! Put all the ingredients in a preserving pan or similar and heat gently to dissolve the sugar crystals (stirring frequently with a wooden spoon). Bring to a rolling boil for 10 minutes and keep stirring.
Place a folded tea towel on the counter just to the side of the apricot pot. Arrange the jars upright on this towel. Use a canning funnel and ladle (or just a ladle, if that’s all you have) to fill the jars with the apricot preserves.
