Here is a simple way to make Cajun seasoning using normal kitchen spices. Combine the salt, oregano, paprika, cayenne pepper, and black pepper in a plastic bag and shake to mix.
But at 4-5 bucks a bottle for the pre-mixed in the store, this is a quick and cheap, better tasting version. The base of a good Cajun seasoning is equal amounts of cumin, coriander and paprika. However, I like oregano, salt and cracked pepper in mine.
