Using VLT, and a LACP trunk to our core, we have 4x10GbE total uplink for ethernet. For FC uplink, using port 44, we also have a break out cable, set to 4x16G, and here too we only use 2 of them from each FSE.
While we will be switching to ethernet based storage later, we still have FC and thus, our plan is to use Fcoe on the (esxi-)servers and use forward it as normal FC traffic to our Brocade FC switches on switch port 44 (configured for FC mode 16-4x) Problem - I know little about Fcoe configuration.

Fibre Channel over Ethernet (Fcoe) is defined as the encapsulation of standard Fibre Channel (FC) protocol frames as data within standard Ethernet frames. This link-level encapsulation, teamed with an Fcoe-aware Ethernet-to-FC gateway, acts to extend an FC fabric to include Ethernet-based host connectivity.
Ethernet switch transmission speeds range from Fast Ethernet, Gigabit Ethernet, 10 Gigabit Ethernet to 100/400GbE. A majority of Fibre Channel networks these days are 8Gbps or 16Gbps, while most Ethernet configurations are typically 1Gbps/10Gbps for home networks and 25G/40Gbps/100Gbps for data center networks.
