A 'double organ' was simply an organ with two manuals. The Voluntaries in D (Z 718/719) are actually two versions of the same piece – one for a one manual instrument, the other for two manuals. (Purcell's works have been catalogued by Franklin Zimmerman, who gave them a number preceded by Z).

This Organists’* Manual is a manual for those who are beginning to study organ or merely taking an interest in organ with no musical knowledge. It will start at the basic foundations of the organ’s physical construction and will conclude with the operation of the console.
First, we should define the nomenclature of Theatre Organ manuals. The lowest manual on a Theatre Pipe Organ is the “Accompaniment ” manual. The second manual up from the bottom is the “Great” manual. The third manual on a 3 manual instrument is the “Solo” manual. “Solo” is almost always the name of the topmost manual on any large TPO.
The manuals are the keyboards on the organ. Most organs contain several manuals; the sole purpose of this is for controlling a specific organ. Although the instrument as a whole is referred to as an organ, most organs contain several “organs” within them. Organs within Organs “Organ” refers to a specific chamber of pipes.
“Organ” refers to a specific chamber of pipes. The first organ is referred to as the “great,” which is the main organ. The great contains the most pipes and is played by the middle manual. The great is usually positioned above the organist. Other organs are the swell, choir, solo, echo, antiphonal, and fanfare.
