Scarlet – An all-over purple kale hybrid with curly leaves that’s a prolific producer. One of my favorites to grow, because it adds color to the garden and the dark leaves make it easier to spot cabbage worms. Siberian – I love this variety of kale.
Learning how to pick kale ensures the kale is fresh; you can use the baby kale harvest for leaves in a few salads. Harvesting kale for use in soups, stews and cooked, mixed greens allows use of larger leaves.
Use a quality potting mix; an organic mix made for growing vegetables is a good option. Transplant your kale into the pot at the same depth it was growing in its previous container, and water it after planting. Kale is most commonly planted from seeds or nursery plants. But it also can be propagated via cuttings.
The optimal soil temperature for planting kale is 60 to 65 degrees. All varieties prefer cool temperatures and will be sweetened by a touch of frost. Hot weather turns kale bitter. Kale is a biennial plant, taking two growing seasons (or years) to complete its life cycle, but it's usually grown as an annual.
Plants reach 24-26 inches tall and 24-30 inches wide at maturity. For full sized leaves, harvest starts at around 60 days. You can find ‘Dazzling Blue’ seeds in packets of 500 available at Burpee. ‘Lacinato’ is the original Tuscan-type kale.
Those in warm climates (zone 8 and above) can continue to plant in the early fall for a late fall to winter harvest. Kale grows equally well in garden soil, raised garden beds, and containers. It also can grow indoors as long as you have adequate lighting.
