The bladder and the gut also benefit from consuming karela. Karela is full of fibre and helps improve bowel movement. It relieves constipation and settles the stomach.
In South India, karela and kantola, are soaked overnight in brine or buttermilk and sundried, and then deep-fried as needed, and like pappadums, served as crunchy accompaniments or added to soups and stews. These vadiyams or vadams are available in Indian grocery stores.
Dry on absorbent paper. Heat the oil in a large pan and fry the Karella pieces for 5 mins. Remove the Karella and put them in a bowl. Add the onions to the oil, and fry for 5 mins then remove and put in the same pan as the Karella. Now fry the garlic and ginger for 2 mins.
When tomatoes and other vegetables are mixed with it, the bitterness is reduced. Traditionally people first scrape karela and remove the hard skin. Then they rub salt in them and let them rest for about 1 hour. Then they squeeze out bitter water before using. Karela can be used with any meal or in a sandwich or pita bread.
Add the coriander, mango powder, turmeric, and red chili powder and mix well. Sprinkle a little water on top and sauté for a minute, stirring well. Add the karela pieces, tamarind paste, and salt to taste; stir and cook until the karela is soft. Stir in the jaggery. Allow the sugar to melt and begin to caramelize a little.
You don’t have to peel the karela when you make it, but doing so helps remove some of the bitterness. I love pairing bitter melon with sweet caramelized onions. Have you tried karela before? Using a vegetable peeler, peel the bitter melon.
