As a general rule, liquid rennet is used sparingly, from between 0.2 ml to 0.5ml per litre of milk and the rennet should also be diluted in around 5 times its amount in boiled then cooled water, before it is added to milk. Rennet must be stored in your fridge and always check with each MAD Millie recipe for exact usage volumes.
MAD Millie also stocks tablet rennet which is shelf stable and has a longer shelf life. Use between 0.2 and 0.5 ml per litre of milk. Dilute product in un-chlorinated water before adding to milk. INGREDIENTS 4 L (1 US Gal) full fat, unhomogenised milk 2 ml calcium chloride. Measure with your hands. using your pipette 2 tsp of citric acid dissolved in 1/4 cup (62 ml) of cool water 1 tablet of rennet dissolved in 1/4 cup (62 ml) of cold, non-chlorinated water NOTE: Rennet will not dissolve fully.
INGREDIENTS 2 cups (500 ml) of fresh cream (40% fat) 2 cups (500 ml) of full fat, homogenised milk 1/4 sachet (1 drop tsp) of Mesophilic Starter Culture 1/2 tablet of rennet dissolved in 1/8 cup .(35 ml) of cool, non-chlorinated water NOTE: Rennet will not dissolve fully.
