MODELS 700 Put the lid (1 ) on by inserting it into the back slide and lock it by pressing the button (13). MODELS 1000-1400 Put the lid (1) on and turn it counterclockwise. DOSAGE This machine can prepare fresh pasta as good as handmade one, if the right dosages of flour and liquid are respected.
To cut the pasta while it is extruded, keep a knife close to the extruder (pic.5). INTERRUPTION OF EXTRUSION CYCLE If you want to make different kinds of pasta without interruption and using the same dough, switch the machine off, unscrew the nut (5), change the extruder (12) and start extruding again.
CLEANING AND TRANSPORT Always wash the parts of the machine which are in contact with the foodstuff carefully whenever you use the machine. All the accessories can be put in the dish-washer. To clean the machine un- plug the power supply cable and use a slightly wet sponge.

The Simac Pastamatic MX700 electric pasta maker makes approximately 1-1½ Lbs of pasta. It comes with 6 extruding discs, a specially sized and marked liquid measuring cup, and a special wrench for changing discs. To get good results, it is important to follow all the instructions and measure ingredients accurately.
I got my Simac 700 about 2 months ago and have used it about 10 times. I wanted to make pasta at home, but I wasn't about to try the hand-made approach favored by every Italian cookbook I've read.
The Pastamatic 700MX operates differently than most models. For one thing, you have to weigh your flour and carefully measure the egg mixture (I use Egg Beaters). It takes longer to knead than my CTC too. BUT...it makes the best pasta I have ever tried.
The complaint about not being able to use 100% semolina is a recognition that that flour alone is just too dense and coarse for an extruder. No electric machine recommends using 100% semolina. But you can use a mixture of semolina and durum flour, which is a finer grind of semolina.
