More often than not, your computer connects to your home router (SAGEMCOM Fast 5260) which then connects to your internet service provider's router before connecting to the internet (port forwarding through 2 routers). To find out, log in to your SAGEMCOM Fast 5260 Router and check the IP address on the status page.

The SAC2V2S router does have both 2G and 5G enabled, but it doesn't differentiate between them in the network name so that devices that are capable of using both networks can switch between them depending on which has the better signal in the home or if one is out of range without you having to manually swap networks.
If the router is not providing the options you are needing, you are not obligated to use the Spectrum router. Many people find that owning their own routers better suits their home network/needs. Welcome stockgro!
Your problem is the router. As you can see, it hands out the wrong IPv6 addresses 2607:f428:ffff:ffff::1 and 2607:f428:ffff:ffff::2, not the ones you configured. The workaround would be to configure the correct addresses manually on the laptop.
In the My Spectrum app, if you go to the Services and Equipment Tab, under Internet, you'll see a WIFI section with an option that says Manage Devices. If you press on that, it will list the devices that are currently connected.
